Caring for the mushrooms

The mushrooms should be refrigerated and kept in their breathable paper bag and NOT in a plastic bag, to prevent sweating. They are best enjoyed within 7 days, and it is recommended that the mushrooms are always cooked before being eaten.

For stocks or soups, fresh mushrooms can be frozen and used directly in cooking without thawing. Alternatively, for long-term preservation, the mushrooms can be dehydrated using a low oven, a purpose-built dehydrator, or the sun (if you’re lucky!).
